Thai Tea Mix

OK, this isn’t coffee, but similar to the Thai Coffee you can get in restaurants. The tea mix is a loose tea, which you brew similar to Thai Coffee. It is also served cold, with creamer, and usually a lot of sugar. You can get the mix online, and make it at home WAY cheaper than in a restaurant. You can make quite a bit with the single bag of loose tea.You don’t make it per-glass, you create about a quart at a time and store it in the refrigerator.
Boil 3 cups of water
Add about 2/3 cup of the loose tea (see below)
Simmer and stir for about 3 minutes
Let cool for about 5 minutes.
Strain (using a tea sock) into a glass container.
(you can’t really strain it through a coffee filter because it will not strain properly)
You should add the sugar while it is still hot, so it will dissolve. Just add sugar to taste, about 1/3 cup.
Chill the mix for a few hours, pour over ice, and then pour cream, or whole milk, or condensed sweet milk, just like in the restaurant.
You only add the cream/milk when you are ready to drink.

How to make Thai Iced Tea:
Thai iced tea is one of the first things people fall in love with when dining at a typical Thai restaurant. It is a native-grown red-leafed tea which is spiced with star anise seed. It is usually brewed strong and then blended with a rich swirl of Half & Half or milk. Delicious!
6 cups water
1 cup Thai tea (cha Thai)
1 cup sugar (vary according to taste)
Add a little Half & Half into each serving to taste
Bring the water to a boil in a large saucepan. Add the tea and remove the pan from heat. Stir to submerge all the tea leaves in the water. Steep for about 5 minutes. Pour the brew through a coffee filter or a fine-mesh strainer into a large pitcher. Add the sugar to the hot tea and stir to dissolve. Cool to room temperature. Cover and refrigerate until ready to serve. To serve: Fill tall glasses with crushed ice. Add enough of the tea to fill the glasses to within 1 inch from the top.
